4 each  medium zucchini
1 pinch  salt
6 oz  yellow onion
1 each  medium garlic cloves
0 1/4 cup  whole wheat flour
0 1/2 cup  part skim shredded mozzarella
0 1/4 cup  grated Parmesan cheese
1 tsp  italian seasoning
1 pinch  black pepper
2 each  eggs
2 each  egg whites
1 each  cooking spray
Directions
  1. Preheat oven to 375°F.
  2. Cut zucchini into 1/4" slices. Peel and dice onion and garlic.
  3. Season zucchini with salt, allow to drain in colander 10 minutes. Wash, and dry very well with paper towels.
  4. In large mixing bowl, combine zucchini, onion, garlic, flour, mozzarella, parmesan cheese, and Italian seasoning.
  5. In separate, small bowl whisk pepper, add eggs and egg whites.
  6. Add eggs to vegetables and toss to mix well.
  7. Lightly coat 12" pizza pan with cooking spray.
  8. Spoon zucchini mixture onto pan, spread to edges. Lightly coat with cooking spray and bake 30-40 minutes.
