2 tbsp  fresh rosemary
4 each  medium garlic cloves
1 lb  boneless pork loin
1/4 tsp  salt
0 1/4 tsp  black pepper
1 each  cooking spray
  1. Preheat oven to 475° F.
  2. Coat baking dish with cooking spray.
  3. Mince rosemary and garlic. Place in small bowl and mix.
  4. Using knife, cut several 1/2" deep pockets into top of tenderloin. Stuff half of rosemary and garlic mixture into pockets.
  5. Massage remaining rosemary and garlic mixture onto surface of pork. Season with salt and pepper.
  6. Place pork in baking dish.
  7. Bake 20 minutes until thermometer reads 145°F.
  8. Let tenderloin rest 5 minutes before slicing.
