2 each  whole eggplant
2 tbsp  olive oil
1 1/2 cup  fresh chopped onion
1 cup  chopped green bell peppers
1 cup  chopped red bell peppers
3 each  medium garlic cloves
0.3333 cup  chopped parsley
1 tbsp  sugar
2 tbsp  unsalted tomato paste
2 tbsp  fresh lemon juice
1 tsp  salt
1 tsp  dried basil
0.125 tsp  black pepper
16 floz  canned, crushed tomatoes
  1. Preheat oven to 400 degrees F.
  2. Poke eggplants with a fork and lay on a aluminum foil covered baking sheet. Roast for 40 minutes or until soft. Let stand until cool enough to handle. Peel skin off and finely chop pulp. Let eggplant sit in a strainer to drain.
  3. Pour oil in a large frying pan and heat over medium-high heat. Sauté onion, bell peppers, and garlic 8 minutes.
  4. Mix in eggplant, parsley, sugar, tomato paste, lemon juice, salt, basil, pepper, and crushed tomatoes. Place lid on pan, lower heat, and simmer 1 hour, stirring frequently. Serve warm or chilled.
