2 tbsp  brown sugar
2 tbsp  low sodium soy sauce
1 tsp  grated orange peel
6 floz  pineapple juice
0 1/2 tsp  salt
2 tsp  canola oil
4 each  salmon fillet
0 1/4 tsp  black pepper
1 pinch  grated orange peel
  1. Whisk together brown sugar, soy sauce, orange zest, pineapple juice, and 1/4 teaspoon salt in a small pot.
  2. Bring to a boil over high heat. Lower heat and simmer 15 minutes, liquid should be reduced to 1/4 cup. Remove from heat and set aside.
  3. Preheat oven to 400 degrees F.
  4. Pour oil in a large frying pan and heat over medium-high heat.
  5. Season both sides of salmon with the rest of the salt and pepper. Place salmon in pan and cook 3 minutes.
  6. Flip salmon over and move pan to oven and bake 3 minutes.
  7. Remove pan from oven and baste with 1 tablespoon of sauce.
  8. Place pan back into oven and cook 1 minute or until salmon is flaky.
  9. When ready to serve, garnish with orange rind and remaining sauce.
