  1. Cut any excess fat from the chicken and cut into 1 inch chunks.
  2. In a 2 quart dish, mix together the pineapple juice, soy sauce, garlic and ginger.
  3. Stir in the chicken chunks and refrigerate for several hours or even overnight.
  4. When ready to serve, thread the chicken, bell pepper, onion, pineapple, mushrooms and tomatoes onto skewers.
  5. Grill for about 15 to 20 minutes.
