6 oz  red onion, sliced
0 1/4 cup  white wine vinegar
1 tbsp  mustard seed
1 tsp  cumin seeds
1 tsp  coriander seeds
2 tbsp  fresh lemon juice
1 pinch  salt
  1. Peel skin off of onion and slice into fine slivers.
  2. Boil 4 cups water, vinegar, mustard seeds, cumin seeds, and coriander seeds.
  3. Mix in onion and cook 2 minutes.
  4. Strain into a fine chinois, discarding liquid.
  5. In a bowl, mix onion mixture with lemon juice and salt.
  6. Let rest for at least 20 minutes before serving.
