4 cup  chopped tomato
0 1/4 each  red onion
1 oz  fresh mint
1 tbsp  fresh basil
1 tbsp  fresh jalapeno chili peppers
1 tbsp  fresh lemon juice
24 oz  salmon fillet
1 each  cooking spray
2 tsp  dijon mustard
1 tsp  black pepper
0 1/2 oz  fresh mint
Directions
  1. Preheat broiler.
  2. Lightly coat baking sheet with cooking spray.
  3. In large mixing bowl, prepare salsa by stirring together tomato, onion, mint, basil, jalapeno pepper, and lemon juice. Set aside.
  4. Lay salmon on baking sheet. Spoon 1/2 teaspoon mustard over each piece.
  5. Season with pepper.
  6. Broil fish 10 minutes or until preferred degree of doneness.
  7. Serve with fresh salsa and top with fresh mint.
