1 tbsp  vegetable oil
1 cup  fresh chopped red onion
2 each  medium garlic cloves
1 cup  chopped tomato
0 1/4 tsp  salt
0 1/4 tsp  black pepper
0 1/4 tsp  ground red pepper (cayenne)
1 lb  fresh cauliflower florets
  1. In skillet, over medium, heat oil. Add onions and garlic, cook 3-5 minutes or until golden.
  2. Add tomato, salt, black and red pepper. Stir and cook 2 minutes.
  3. Stir in cauliflower, cover. Lower heat to medium-low, simmer 10 minutes or until soft.
