15 oz  Cereal, raisin bran
5 cup  white all purpose flour
16 oz  Fruit, tropical mix, bits, dried
1 cup  sugar
0.6667 cup  unpacked light brown sugar
5 tsp  baking soda
1 tbsp  ground cinnamon
4 cup  low fat buttermilk
4 each  eggs
1 each  egg whites
0 1/2 cup  canola oil
Directions
  1. Preheat the oven to 400 degrees F. Coat a nonstick muffin pan with cooking spray.
  2. In a large bowl, mix the cereal, flour, dried fruits, sugar, brown sugar, baking soda, and cinnamon.
  3. In another bowl, whisk the buttermilk, eggs, egg white, and oil. Add this to the cereal mix until moistened.
  4. Fill the muffin tins about 3/4 of the way full of batter. Bake for 15-17 minutes or until golden brown. Let cool in the tins for about 5 minutes and then place on wire rack.
