3 tbsp  margarine
2 tbsp  fat free cream cheese
1 cup  sugar
1 each  eggs
2 cup  white all purpose flour
2 tsp  low sodium baking powder
0 1/2 tsp  baking soda
1 cup  fresh mashed banana
0 1/2 cup  low fat buttermilk
1 tsp  coconut extract
0.3333 cup  Coconut, dried, flaked, sweetened, canned
0 1/4 cup  packed light brown sugar
0 1/4 tbsp  fresh lime juice
Directions
  1. Preheat the oven to 350 degrees. Cover a 9 x 5 x 3 inch baking pan with nonstick cooking spray.
  2. In a large bowl, beat 2 tablespoons of margarine and the cream cheese until creamy. Add in the sugar and the egg, beating well.
  3. In a separate bowl, mix the flour, baking powder and baking soda. Put to the side for use later on.
  4. In a small bowl, combine the mashed bananas and buttermilk. Put to the side for use later on.
  5. Add the flour mixture to the cream cheese mixture alternately with the banana mixture.
  6. Stir in the coconut and lime juice.
  7. Pour the batter into the prepared pan. Bake for 50 to 60 minutes or until an inserted toothpick comes out clean.
