0.3333 cup  quick cooking brown rice
0 1/4 lb  fresh mushroom slices
0 1/4 lb  snow peas
0 1/2 cup  fat free reduced sodium chicken broth
1 tbsp  rice vinegar
2 tbsp  low sodium soy sauce
1 pinch  black pepper
1 pinch  salt
  1. Cook rice according to package directions. Add mushrooms and snow peas halfway through cooking and continue to boil until rice is done.
  2. Mix chicken broth, vinegar, and soy sauce together and toss with rice and vegetables. Add salt and pepper to taste.
