0 1/2 lb  salmon fillet
1 pinch  black pepper
1 pinch  salt
8 oz  arugula
0 1/4 cup  fresh basil
0 1/4 cup  plain yogurt, whole milk
2 tsp  fresh lime juice
1 tbsp  mayonnaise
1 each  medium tomatoes
  1. Preheat grill to medium.
  2. Sprinkle salmon with salt and pepper to taste. Grill 5 - 7 minutes per side.
  3. Remove any large stems from arugula and place in food processor.
  4. Add yogurt, lemon juice, basil, and mayonnaise. Process until smooth.
  5. Spoon over grilled salmon.
  6. Garnish with sliced tomatoes, serve hot.
