1 each  cooking spray
16 oz  arugula
4 each  boneless skinless chicken breasts
2 tsp  fresh sage
2 tsp  fresh rosemary
1 each  fresh plum tomatoes
0 1/2 tsp  salt
0 1/2 tsp  black pepper
4 tsp  olive oil
4 each  pitted calamata olives
  1. Preheat oven to 450 degrees.
  2. Cut each piece of parchment into a heart shaped piece.
  3. Coat each parchment piece with cooking spray, being sure to leave a 2 inch border around the edge.
  4. Arrange 1/2 cup arugula on one side of parchment paper heart so that it touches middle, but not ungreased border.
  5. Lay chicken breast on top and season with 1/2 teaspoon of sage and 1/2 teaspoon rosemary. Place 1/4 cup tomato on top. Top with 1/8 teaspoon salt and 1/8 teaspoon pepper, oil, and olives, if using.
  6. Fold parchment and secure edges. Continue on with the rest of the chicken and ingredients.
  7. Move packages to a baking sheet and bake 20 minutes.
  8. When ready to serve, place each package on a plate and let guests open themselves.
