1 each  cooking spray
24 oz  salmon fillet
0 1/2 tsp  salt
0 1/4 tsp  black pepper
1 tsp  olive oil
1 tbsp  Shallots, fresh
1 1/2 cup  fresh mushroom slices
16 oz  fresh spinach leaves
1 tsp  grated lemon rind
1 tsp  fresh lemon juice
  1. Heat a cooking spray coated frying pan over medium-high heat. Season both sides of fish with 1/4 teaspoon salt and pepper.
  2. Lay fish in pan and cook 5 minutes per side or until fish is flaky. Take fish out of pan and set aside.
  3. Cook oil and shallots in same pan for 1 minute. Mix in mushrooms and cook 2 minutes (do not stir). Cook another 2 minutes, stirring occasionally.
  4. Mix in spinach and cook 30 seconds. Take off of heat and mix in remaining salt, lemon rind, and juice. Spoon sauce over fish.
