  1. Heat a large frying pan over medium high heat. Sprinkle salt in pan and lay steaks on top. Cook steaks 2 minutes per side. Take steaks out of pan and set aside.
  2. Cook garlic in pan for 30 seconds. Pour in sherry and let boil 30 seconds, being sure to scrape up any browned bits from the bottom of the pan.
  3. Move steaks back into the pan and cook 2 minutes.
  4. Mix in soy sauce and pepper. Take steaks out of pan and place on a serving platter.
  5. Take pan off of heat and mix in butter until melted and combined. Spoon sauce over steaks and top with fresh ginger if using.
