1 each  whole turkey, raw
1 tsp  olive oil
2 tbsp  oregano leaves
2 tbsp  ground coriander
1 tbsp  grated lemon rind
1 tsp  salt
0 1/2 tsp  black pepper
3 each  medium garlic cloves
2 each  fresh lemons
1 each  cooking spray
  1. Frozen 12-lb turkey will need 2 to 3 days to fully thaw. Refrigerator thawing is recommended.
  2. Preheat oven to 350°F.
  3. Lightly coat bottom of large roasting pan with cooking spray.
  4. Remove and discard giblets and neck, trim excess fat.
  5. Rinse turkey with cold water, pat dry.
  6. Lightly coat turkey with oil.
  7. In mixing bowl, combine oregano, coriander, lemon rind, salt, pepper.
  8. Rub spices onto entire turkey.
  9. Arrange garlic and lemon in cavity, tie ends of legs together with cord.
  10. Lift wing tips, tuck under turkey.
  11. Place turkey, breast side up, into roasting pan. Bake for 1 hour.
  12. Cover breast with aluminum foil and bake another 2 hours or until internal temperature reaches 180°F.
  13. Allow to cool 10 minutes before slicing.
