0 1/2 cup  orange juice
2 each  large oranges
2 tbsp  fresh chopped green onion
1 tbsp  fresh ginger root
1 tbsp  fresh cilantro
2 tbsp  rice vinegar
2 tbsp  low sodium soy sauce
1 tbsp  vegetable oil
2 tbsp  grated orange peel
2 oz  red hot chile peppers
1 lb  large raw shrimp
1 each  cooking spray
  1. In small bowl, whisk orange juice, green onion, ginger, cilantro, vinegar, soy sauce, oil, orange peel, and chile pepper .
  2. Add shrimp and coat well.
  3. Cover and refrigerate for 15 minutes.
  4. Remove shrimp from marinade, reserve liquid.
  5. In large saucepan, bring marinade to boil. Boil for 2 minutes, remove from heat and set aside.
  6. Thread shrimp and orange quarters onto 8 skewers.
  7. Lightly coat large grill pan or grill with cooking spray .
  8. Grill shrimp 4 minutes per side, coating occasionally with reserved marinade.
