5 1/2 lb  Fish, bass, striped, fillet, raw
1 tbsp  extra virgin olive oil
1 tsp  salt
0 1/4 tsp  black pepper
0.3333 cup  fresh basil
0 1/4 cup  fresh cilantro
2 tbsp  fresh lime juice
  1. Preheat oven to 500 degrees F. With foil, line a baking sheet and coat with nonstick spray.
  2. Make 4 deep cuts, crosswise, to the bone, with a sharp knife, on both sides of fish.
  3. With the oil, rub both sides of the bass, and then sprinkle with the salt and pepper.
  4. In a bowl, mix the basil, cilantro, and lime juice. Use the mixture to rub both sides of the bass. Roast 45-55 minutes until center of fish is opaque.
