1 lb  baby carrots
1 tsp  grated orange peel
0 1/4 cup  orange juice
2 tsp  unsalted butter
2 tsp  honey
1 tsp  fresh ginger root
0 1/4 tsp  salt
0.125 tsp  black pepper
  1. Place carrots, orange rind and juice, butter, honey, ginger, salt, and pepper to a medium pot.
  2. Pour in 1 cup water and let boil over medium heat, stirring frequently.
  3. Lower heat and simmer 30 to 35 minutes.
  4. Liquid should be evaporated and carrots will be coated with a thick sauce.
