  1. Preheat the oven to 475 degrees.
  2. Spray a nonstick baking sheet with cooking spray. Place the potatoes on the sheet, pour the oil on top, and shake the pan to coat the potatoes.
  3. Season potatoes with paprika and bake for 5 minutes.
  4. Stir then bake for an additional 5 minutes.
  5. Heat a skillet over medium high heat. Add the sausage and cook for 5 minutes or until browned, stirring to break up the large pieces.
  6. Remove the sausage from the pan and place on a paper towel.
  7. Place the mushrooms, bell pepper, and onion in the pan and cook for approximately 5 minutes.
  8. Mix the sausage, potatoes, parsley, salt, and mushroom mixture together.
