  1. Preheat the oven to 350 degrees F and spray an ovenproof casserole dish with cooking spray.
  2. Arrange the potatoes on the bottom of the pan and place 1/2 cup cheese, bell pepper, and onion on top.
  3. Pour the egg substitute and milk over the top.
  4. Bake, covered, for approximately 45 minutes.
  5. Place the bacon slices in between two paper towels and microwave on high for 3 minutes or until crisp.
  6. Let cool slightly then crumble into small pieces.
  7. Once the casserole is done, sprinkle the remaining cheese and bacon pieces on top and bake for 5 minutes. Let sit for 10 minutes before serving.
