Ingredients Directions
  1. Preheat the broiler
  2. Mix the pancake mix, 1/4 cup egg substitute, and enough water to form a thick batter.
  3. Combine the cheese, 1/4 cup egg substitute, vanilla extract, orange zest, sugar, and sugar substitute.
  4. Spray a nonstick pan with cooking spray and place over high heat. Pour 1/4 of the pancake mixture into the pan, reduce the heat to medium-high and cook for about 30 seconds. Flip over and cook the other side for a few minutes. Repeat the process until all is cooked.
  5. Smear 1/4 of the cheese mixture on each pancake then place under the broiler for about 2 minutes. Fold in half, then top with sour cream and 1 strawberry.
