2 tbsp  light mayonnaise
2 tbsp  Horseradish, cream
2 tbsp  yellow mustard
1 tbsp  fresh lime juice
2 each  medium garlic cloves
3 each  scallions

0 1/2 lb  cooked chicken breast, diced
0 1/4 cup  chopped apples
8 each  Lettuce, romaine, fresh, inner leaf
4 tbsp  fresh chives
1 tbsp  sweetener (sugar substitute)
  1. Whisk the dressing ingredients together in a salad bowl. Add the chicken. If you are using the apple, add it along with the chicken. If you choose to omit the fruit, you may want to add the small amount of sugar substitute.
  2. Serving suggestion: Place lettuce leaves on 4 plates. Spoon salad on top and sprinkle with chives.
