1 cup  pancake mix
0 1/2 cup  liquid egg substitute
0.3333 cup  cold water
1 each  butter flavored cooking spray
1 cup  fresh strawberries
1 cup  fresh blueberries
2 tbsp  fat free sour cream
Directions
  1. Mix together the pancake mix, egg substitute, and water to form a thin batter.
  2. Spray a nonstick saucepan with the cooking spray and add the strawberries and blueberries. Warm the berries on low heat, gently stirring often. Set aside and keep warm.
  3. Heat a nonstick skillet over medium-high heat and spray with cooking spray.
  4. Spread 3 tablespoons of batter evenly on the bottom of the pan and cook for approximately 30 seconds or until the edge is slightly brown. Flip over and cook the other side for about 30 seconds. Once the crepe is done cooking, place it on a plate and fold into quarters. Repeat the process until all of the batter is used.
  5. Divide the crepes onto 3 plates and top each with 1/3 of the warm berries and sour cream.
