4 each  eggs
4 oz  dungeoness crab meat
1 cup  Sprouts, mung bean, mature, fresh
1 each  scallions
1 each  medium garlic cloves
0 1/2 tsp  ground ginger
0 1/2 tsp  canola oil
  1. In medium bowl, mix the eggs, crab meat, sprouts, scallion, garlic, and ginger.
  2. Coat skillet with 1/4 teaspoon canola oil. Ladle half of the egg mix into skillet pan. Cook over medium until bottom is browned. Flip and cook the other side until brown on the bottom. Fold omelet in half.
  3. Place omelet on serving plate and repeat step 2 with remaining egg mix.
