  1. Spray a nonstick skillet with cooking spray. Cook the onion and the chiles for about 3 minutes over medium heat, stir rarely.
  2. Combine the egg substitute, cheese, pepper, and hot pepper sauce in a bowl and pour into the skillet. Once the bottom begins to set, lift so the uncooked part can be cooked.
  3. Cook for about 3 minutes or until the eggs are scrambled.
  4. Divide the egg mixture onto the tortillas. Roll up and serve.
