1 each  Eggs, large, raw
2 tbsp  packed brown sugar
1 tbsp  canola oil
0 3/4 cup  low fat buttermilk
1.125 cup  Flour, all purpose, unbleached, enriched
1 tsp  baking soda
1 tsp  ground cinnamon
0.125 tsp  salt
0 3/4 cup  Cereal, bran flakes
0 1/2 cup  Apples, fresh, chopped
2 tbsp  dried currants
1 each  cooking spray
Directions
  1. Preheat the oven 400 degrees F. Place 6 paper baking cups in the muffin tin and spray with cooking spray.
  2. Whisk the egg, brown sugar, oil, and buttermilk together in a bowl.
  3. In a separate bowl, mix the flour, baking soda, cinnamon, and salt. Mix in the bran cereal, apple, and currants. Combine with the egg mixture and mix just enough to moisten all of the ingredients.
  4. Fill the muffin cups until they are almost full and bake for about 20 minutes. Let cool for 5 minutes before taking them out of the pan.
