0.6667 cup  low carb baking mix
1 each  butter flavored cooking spray
1 each  small apples
1 pinch  ground cinnamon
4 oz  sugar-free maple syrup
  1. Make the pancake batter according to the directions on the package and put to the side.
  2. Spray a large nonstick saute pan with the cooking spray and heat over medium high heat for 1 minute. Cook the apple slices for 1 minute on each side then season with cinnamon.
  3. Pour the batter over each apple and cook until lightly golden brown on each side.
  4. Separate the pancakes onto 2 plates and drizzle the maple syrup over all.
