3 each  fresh carrots
2 each  medium garlic cloves
1 tbsp  olive oil
2 tbsp  fresh lemon juice
1 pinch  paprika
1 pinch  salt
  1. Place carrots in a small saucepan, cover with water, and cook with garlic until soft, about 20 minutes. Drain and cut into slices. For a more decorative look, use a knife with a serrated edge.
  2. Combine remaining ingredients and toss together with carrots. For best flavor, leave in refrigerator a few hours before serving.
  3. Garnish with chopped fresh parsley (optional).
