49 floz  low fat unsalted chicken broth
2 each  fresh leeks
0 1/2 each  medium carrots
1 tbsp  extra virgin olive oil
1 each  medium garlic cloves
1 tsp  chopped parsley
1 pinch  black pepper
2 cup  cold water
Directions
  1. Rinse leek slices extremely well to remove grit.
  2. In stock pot, heat oil on medium heat and saute garlic and leeks for approximately 3 minutes.
  3. Add chicken broth, water, carrot slices, snipped parsley, and black pepper.
  4. Bring to gentle boil and reduce heat to simmer for 30 minutes or greater. Longer cooking time creates bolder flavor.
