2 tsp  olive oil
0.3333 cup  shallots, chopped
1 1/2 tsp  curry powder
1 cup  clam juice
0 1/2 cup  white wine
0 1/2 cup  lite coconut milk
2 tbsp  fresh lemongrass
0 1/4 tsp  hot red pepper flakes
3 lb  mussels
2 tbsp  fresh cilantro
  1. Pour oil in a large Dutch oven or pot and heat over medium heat. Cook shallots in oil for 1 minute. Mix in curry powder and cook 30 seconds.
  2. Mix in clam juice, wine, milk, lemon grass, and pepper and let simmer. Stir in mussels and let boil.
  3. Place lid on pot, lower heat, and simmer 5 minutes or until shells open up. Season with cilantro. Throw away any unopened shells.
