1 1/4 cup  fresh chopped onion
0 3/4 cup  cold water
0 1/2 cup  cider vinegar
0 3/4 tsp  black pepper
0 1/2 tsp  ground red pepper (cayenne)
0 1/4 tsp  saffron
3 tbsp  chopped parsley
1 1/2 tbsp  fresh cilantro
  1. Add onion, water, vinegar, peppers, and saffron to a bowl.
  2. Wrap with plastic wrap and refrigerate for a minimum of 24 hours.
  3. Just before serving, mix in parsley and cilantro.
