1 each  cooking spray
1 tbsp  bread crumbs
2 cup  fat free cottage cheese
1 1/2 cup  fat free shredded cheddar cheese
2 each  eggs
6 tbsp  whole wheat flour
10 oz  Spinach, chopped, frozen
0 1/4 cup  fresh chopped green onion
1 tbsp  pimentos
1 tbsp  chopped parsley
0 1/4 tsp  ground cayenne (red pepper)
0 1/4 tsp  black pepper
0.125 tsp  ground nutmeg
  1. Preheat oven to 350 degrees F. Spray a 13x9 inch pan with cooking spray. Coat bottom and sides of pan evenly with bread crumbs (use an additional tablespoon of crumbs, if necessary).
  2. Mix together eggs and cheeses in a bowl, then stir in remaining ingredients until well blended.
  3. Pour ingredients into pan and bake until lightly browned, about 40 minutes.
  4. Before cutting into squares, let cool about 10 minutes.
