1 tbsp  olive oil
1 each  cooking spray
1 each  small onions
6 each  scallions
3 each  medium garlic cloves
16 oz  Cauliflower, florets, frozen
1 pinch  salt and pepper
1 tbsp  Soup, chicken flavor noodle, dry
1 tbsp  Meat Extender
1 cup  cold water
1 pinch  chopped parsley
  1. In a deep pot, prepare onions, scallions, and garlic the Enlitened way (Spray non-stick skillet with spray and heat oil over medium, add leeks, onions, cook until brown, stir in garlic cloves and a few drops water, cook for a few more minutes.)
  2. Add cauliflower (no need to defrost), salt and pepper and soup powder.
  3. Add just enough water to cover the contents. Bring to a boil.
  4. Lower heat and boil for 15-20 minutes. Remove from heat, cool, and blend. (It is best to use an immersion blender directly in the pot for this.)
