2 tsp  ground cumin
2 tbsp  fresh lemon juice
1 tbsp  vegetable oil
1 tsp  white wine vinegar
0 1/4 tsp  salt
6 oz  Beans, black, mature, cooked
0 1/2 cup  chopped red bell peppers
0 1/2 cup  fresh cilantro
2 tbsp  fresh chopped red onion
  1. Heat cumin for 1 minute in a small skillet, stirring constantly.
  2. Transfer to a large bowl and add lemon juice, oil, vinegar, and salt. Bend with a wire whisk until smooth.
  3. Add beans, red pepper, cilantro, and red onion. Toss to combine.
