1 lb  medium russet potato
1 each  cooking spray
1 tbsp  grated Parmesan cheese
1 tsp  paprika
  1. Preheat oven 375°F.
  2. Rinse and dry potato. Leaving skin in tact, slice potato paper thin.
  3. Coat 2 baking sheets with cooking spray. Place potato slices in 1 layer on the baking sheest.
  4. Bake, turning occasionally until golden brown, about 45 minutes.
  5. In small bowl, mix Parmesan cheese and paprika.
  6. Sprinkle over potatoes. Return to oven and bake 5 minutes more. Cool before serving.
  7. Repeat baking steps with second sheet of chips.
