29 oz  low fat unsalted chicken broth
3 cup  cooked chicken breast, diced
2 cup  frozen sweet corn kernels
10 3/4 oz  tomato puree
10 oz  canned red tomatoes with green chilies, diced
1 each  large onion
2 each  medium garlic cloves
1 each  bay leaves
1 1/2 tsp  ground cumin
1 tsp  salt
0 3/4 tsp  chili powder
0.125 tsp  black pepper
0.125 tsp  ground cayenne (red pepper)
4 each  6-inch corn tortillas
  1. Add all ingredients, except tortilla strips to a crock pot. Place lid on pot and cook on low for 4 hours.
  2. Preheat oven to 375 degrees F.
  3. Arrange tortilla strips on a baking sheet and toast 5 minutes per side.
  4. Take bay leaf out of soup before serving. Serve soup with tortilla strips on top.
