Ingredients Directions
  1. Heat oven to 475 degrees. Coat 2 aluminum foil covered baking sheets with cooking spray.
  2. Lay vegetables in on layer on the pans. Coat vegetables with cooking spray and season with Italian seasoning,
  3. Bake in oven 15 to 20 minutes, mixing frequently.
  4. Combine broth, wine, tomato paste, vinegar, and sugar in a pot and heat to a boil. Spoon mixture over vegetables and mix in tomatoes.
  5. Lower oven temperature to 350 degrees and bake, covered with foil 20 to 30 minutes or until vegetables are soft. Sprinkle with salt and pepper.
