  1. Mix lemon juice, crushed garlic, and oil. Whisk thoroughly.
  2. Add garbanzo beans, salt, and pepper.
  3. Slice zucchini into 1/2 inch pieces.
  4. Bring a pot filled half way with water to a boil; add zucchini.
  5. Let simmer for 2-3 minutes.
  6. Drain before adding the dressing. Toss well.
  7. Serve on lettuce leaves.
