1 1/2 cup  cold water
0 1/2 cup  Barley, pearled, dry
0 3/4 cup  shredded carrots
1 tbsp  canola oil
1 tbsp  fresh thyme
2 tbsp  fresh lemon juice
1 pinch  salt and pepper
  1. Bring water to a boil, add barley.
  2. Reduce heat to medium-low, cover partially, and let simmer for 5 minutes.
  3. Stir in carrots, cover, and let simmer for another 5 minutes.
  4. Remove cover and boil until liquid is evaporated.
  5. Stir in oil, thyme, and lemon juice.
  6. Add salt and pepper before dividing and serving.
