0 1/2 cup  Wheat, cracked, bulgur, dry serving
0 1/2 cup  chicken broth
1 each  medium cucumber
1 each  medium tomatoes
1 each  medium carrots
3 each  fresh green onions
3 tbsp  fresh lime juice
0 3/4 tbsp  chili powder
1 pinch  garlic powder
Directions
  1. Place bulgur in a colander and rinse under cold running water. Drain and transfer to a small bowl.
  2. In a small saucepan bring the chicken broth to a boil. Stir in the bulgur, remove from the heat and let stand for 1 hour.
  3. Stir in the cucumbers, tomatoes, carrots, and green onions into the bulgur.
  4. In a small bowl whisk the lime juice, chili powder and garlic powder together. Pour over the bulgur mixture and stir until combined.
  5. Cover and chill for 2 hours before serving. Stir before serving.
