4 each  boneless skinless chicken breasts
1 1/2 tsp  vegetable oil
0 1/2 tsp  crushed garlic
1 each  fresh green onions
0 1/4 cup  fresh chopped spinach
0 1/4 cup  fresh mushrooms
0 1/4 cup  shredded mozzarella cheese
0 1/4 cup  fat free reduced sodium chicken broth
0.3333 cup  fat free reduced sodium chicken broth
1 1/2 tsp  margarine
1 tsp  crushed garlic
1 1/2 each  fresh tomatoes
1 tbsp  chopped parsley
  1. Spray nonstick cooking spray in a baking dish and preheat oven to 400 degrees.
  2. Pound chicken between 2 sheets of wax paper with a meat mallet or rolling pin until flattened.
  3. Heat oil in a nonstick pan and add garlic, onions, spinach, and mushrooms, cook until soft.
  4. Spoon mixture evenly over chicken breast, sprinkle with cheese, roll up, and hold in place with a toothpick.
  5. Place in baking dish with 1/4 cup of broth and bake until chicken is cooked, about 10 minutes.
  6. Remove from oven, place chicken on serving dish, and keep warm.
  7. While chicken is baking, melt margarine in a small pot and saute garlic for 1 minute.
  8. Add in the tomatoes and remaining 1/3 cup of broth, cook until thoroughly heated, about 3 minutes. Stir in parsley and serve over chicken.
