3 cup  sliced carrots
0 1/4 cup  sherry vinegar
3 tbsp  fresh lemon juice
2 tsp  olive oil
0 1/4 tsp  salt
0 1/4 tsp  black pepper
1 each  medium garlic cloves
2 oz  seedless raisins
2 tbsp  fresh chopped onion
2 tbsp  chopped parsley
0 1/2 oz  pine nuts
0 1/2 oz  fresh mint
  1. Boil a large pot of water. Place carrots in boiling water and let boil for 1 minute. Strain and run under cold water.
  2. Whisk together vinegar, lemon juice, oil, salt, pepper, and garlic. Mix in carrots, raisins, onions, parsley, and pine nuts. Wrap with plastic wrap and refrigerate until chilled. Top with mint right before serving.
