3 lb  fresh asparagus
0 1/4 cup  fresh mint
2 tbsp  extra virgin olive oil
1 tbsp  fresh lemon juice
1 tbsp  minced garlic
1 pinch  salt and pepper
  1. Fill a six quart pot with water and set to boil.
  2. Wash and trim asparagus.
  3. Place asparagus in boiling water. Place lid on pot and cook 3 to 4 minutes, or until they are crisp-tender. Strain. Dunk asparagus in an ice-bath and strain again.
  4. Place asparagus back into pot. In a serving dish, toss with mint, oil, lemon juice, garlic, salt, and pepper.
