1 cup  chopped tomato
0 1/2 cup  Cucumber, with skin, fresh, slices
2 tbsp  fresh chopped green onion
2 tbsp  fresh cilantro
2 tsp  fresh jalapeno chili peppers
2 tsp  fresh lemon juice
2 tsp  olive oil
0 1/4 tsp  salt
0.125 tsp  black pepper
  1. Combine tomato, cucumber, onions, cilantro, and pepper in a large bowl.
  2. Whisk together lemon juice, olive oil, salt, and pepper and pour over vegetables. Gently stir to combine. Let rest for 2 hours.
