1 1/2 oz  medium shallots
2 tbsp  white wine vinegar
1 tbsp  grated orange peel
0 1/4 cup  orange juice
2 tsp  fresh thyme
0 1/2 tsp  salt
2 tsp  extra virgin olive oil
3 cup  fresh mushrooms
1 pinch  black pepper
  1. Must be refrigerated for at least 1 hour before serving.
  2. In large bowl whisk together shallots, vinegar, orange rind, orange juice, thyme, salt, and olive oil.
  3. Add mushrooms and gently stir to coat.
  4. Cover with plastic wrap and refrigerate for at least 1 hour, stirring a few times.
  5. Season with pepper before serving.
