0.3333 cup  cooking sherry
2 tsp  olive oil
2 tsp  dijon mustard
0 1/2 tsp  salt
0 1/4 tsp  ground oregano
0.125 tsp  black pepper
6 cup  Cucumber, with o skin, fresh, sliced
3 cup  fresh mushrooms
8 oz  red onion
  1. Whisk together vinegar, oil, mustard, salt, oregano, and pepper in a large bowl.
  2. Mix in cucumbers, mushrooms, and onions and combine to coat. Wrap mixture and place in refrigerator for at least 2 hours. Serve using a slotted spoon.
