2 lb  fresh green beans
2 tbsp  dijon mustard
3 tbsp  balsamic vinegar
1 1/2 tbsp  maple syrup
2 tsp  extra virgin olive oil
2 tbsp  fresh chopped green onion
1 pinch  salt and pepper
Directions
  1. Boil 2 quarts of water in a pot over high heat. Pour in beans and cook 5 to 8 minutes or until tender-crisp. Strain and pour into a serving bowl.
  2. Whisk together mustard, vinegar, syrup, and oil. Spoon mixture over hot beans and top with onion. Sprinkle with salt and pepper.
