4 each  mahi mahi fillets
0 1/4 tsp  salt
0.125 tsp  black pepper
2 tsp  olive oil
0 1/4 cup  fresh chopped red onion
1 cup  white wine
0 1/4 cup  balsamic vinegar
1 tbsp  capers
1 tbsp  chopped parsley
  1. Season both sides of fish with salt and pepper.
  2. Pour oil in a large frying pan. Heat over medium-high heat. Cook fish and onion in oil for 3 minutes. Flip fish over.
  3. Mix in wine, vinegar, and capers and cook 3 minutes.
  4. Take fish out of pan using a slotted spoon. Cook liquid another 3 minutes or until reduced to 1/2 cup.
  5. Spoon sauce over fish and top with parsley when ready to serve.
