Ingredients

2 tbsp  olive oil
1 each  canola cooking spray, non-aerosol
8 oz  fresh leeks
1 cup  chopped scallions
1 cup  minced onion
3 each  medium garlic cloves
1 pinch  boiling water
Directions
  1. Heat the oil together with the cooking spray in a large non-stick skillet over medium heat for a few seconds. Add the leeks, scallions, and onions; stir and lower heat.
  2. Cook until the leeks ,scallions, and onions start to brown, stirring occasionally. Add garlic and water; the mixture will start to brown.
  3. Cook another few minutes, scraping the bottom of the pan so that nothing sticks.
